Greek Salad (with Chicken)
I love chicken and salads and I am always looking for recipes to add variety to my diet. I like to keep thing exciting. So I found this recipe for a Greek salad and decided to add some chicken to it for some extra protein.

Here’s what you need…
- 2 large chicken breasts (about 8 oz each)(optional)
- 3 medium tomatoes
- 2 bell peppers
- 1 medium red onion
- 1 large cucumber
- 16 pitted Kalamata black olives
- 4 oz low fat Greek feta cheese
- 3 tbsp extra virgin olive oil
- 1 tbsp oregano
- Dash salt
- Cook and cut chicken into thin strips.
- Cut peppers, onion and cucumber into thin strips and dice tomatoes.
- Toss them and olives into very large bowl. Mix.
- Mix together olive oil, oregano and salt for dressing. Pour on veggies in bowl.
- Sprinkle on feta.
- Add chicken if desired.
Nutritional Analysis: One serving (with chicken) equals: 232 (428) calories, 17g (22g) fat, 11g carbs, 4g fiber and 8g (42g) protein.
